5 Amazing Cakes-In-A-Mug Recipes For Your Instant Sweet Pleasure

Mug Cakes are great for so many reasons, they are really quick to mix, it takes seconds to bake, and they require no oven. We can spend all day thinking about what to have for dessert and satisfy your taste buds yet sometimes we have no time or means to do so. Well, Here’s an ingenious way to solve that sweet dilemma… Microwave Mug Cakes.

1. Funfetti Mug Cake

Ingredients:

  • 2 tbsp (2oz/ 60g) unsalted butter
  • 1 large egg
  • 2 tablespoons milk
  • 1 teaspoon pure vanilla extract
  • 1/4 cup (50g) granulated sugar
  • 6 tablespoons (50g/ 1 3/4 oz) self-raising flour ( to make SF flour add 2 tsp of baking powder to 150g/6oz/1 cup plain flour)
  • tiny pinch of kosher salt
  • Candied sprinkles

Instructions:

Step #1: Add Butter

Place the butter in a mug and melt it using a microwave for 20 to 30 seconds.

Step #2: Egg, Milk, Vanilla Extracts, and Sugar

Then, add the egg, milk, vanilla extracts, and sugar then whisks it in with a fork.

Step #4: Flour and Salt

And then add the flour and salt then gently mix together.

Step #5: Sprinkles

And of course, the most important ingredient, the sprinkles. Put some sprinkle and then gently fold them in.



 

Your little Funfetti cake is now ready for the microwave. And you will not believe how fast it’s going to be.

Step #6: Ready to Microwave

Microwave it for 50 seconds until risen. Take care not to overcook or the cake will dry out fast.

Step #7: Frosting

You just want to eat it. But hang on until it goes cold and then top it with some bubblegum frosting according to your style. And of course, it would not be complete without sprinkles.

Ta-da! It is so sweet and gorgeous!

2. Gluten-Free Chocolate Banana Mug Cake

Ingredients:

  • 1 ripe banana
  • 1/4 cup (4 tbsp) peanut butter (or any nut butter)
  • 1 large egg
  • 2 tsp granulated sugar
  • 3 tbsp unsweetened cocoa powder

Instructions:

Step #1: Banana in a Mug

In a microwaveable mug, You have  to mash up the ripe banana. Just use a fork.

Step #2: Butter and Egg

Next, add your peanut butter and mix it well. You can use any nut butter you want.

Step #3: Sugar

Now, you can add the granulated sugar — to add sweetness.

Step #4: Add Egg

And crack in an egg and mix well. Keep on mixing until you see the egg combine with the peanut butter.

Step #5: Add Cocoa Powder

And then lastly, add in your cocoa powder.

Step #6: Microwave

Microwave it for 1 minute until risen and firm. Make sure not to overcook the cake to avoid drying out fast.

Step #7: Banana Toppings

Before eating it right away, don’t forget to lay some bananas on top and dig in.

3. Red Velvet Mug Cake

Ingredients:

4 tbsp flour
4 1/2 tbsp sugar
1/8 tsp baking powder
1 1/2 tbsp unsweetened cocoa powder
pinch of salt
pinch of cinnamon
3 tbsp oil
3 tbsp buttermilk (substitute sour cream or yogurt if not available)
1 egg
1 tsp Vanilla extract
1/2 tsp red food coloring

Instructions:

Step #1: Mixing the wet Ingredients

In a microwavable mug, add the oil, buttermilk, egg, red food coloring, and vanilla extract. And then whisk these all together.

Step #2: Add the dry Ingredients

Then, add a flour, sugar, baking powder, cocoa powder, and a pinch of cinnamon and salt. And then mix all these ingredients together.

Step #3: Cooking in the Microwave

Now, it’s time to cook this in the microwave just for 50 seconds. Please note every microwave has different specifications so cooking may vary. Be careful not to overcook as the batter will become dense and rubbery.

 

Step #4: Topping the Red Velvet

One last, there’s only one thing you can top red velvet with and that is a cream cheese frosting.

It looks delicious — Grab your fork and dig in your one big generous portion. Yum!

4. Apple Crumble Mug Cake

Ingredients:

3 tablespoons flour
1 heaping tbsp brown sugar
1/2 tsp ground cinnamon
1/8 teaspoon baking powder
1 tbsp applesauce
1/2 tbsp vegetable oil
1/2 tbsp milk
1/8 tsp vanilla extract
crumble topping
1 tbsp butter
2 tbsp flour
1 tbsp brown sugar

Instructions:

Step #1: Mixing the Dry Ingredients

Just like the other mug cakes. In a small mug, combine your wet ingredients, add your dry and then mix these together. You’ll notice this batter is thicker than the others.

Step #2: Applesauce, Vegetable Oil, Milk, and Vanilla

Add apple sauce and mix until just combined (it will be thick and sticky) and then add vegetable oil, milk and vanilla and stir until wet; do not over mix.

Step #3: Prepping Your Crumble

In a separate bowl, combine 1 tbsp of butter, 2 tbsp of flour, 1 tbsp of brown sugar with a fork until combined.

Step #4: Ready to Microwave

Microwave on high for about 45 seconds. (Remember cooking time may vary). Take care not to overcook the cake or it will dry out fast.

Step #5: Serve

And, this is the exciting part. Serve with ice cream and salted caramel sauce on top.

Last but definitely not the least…

5. Rainbow Mug Cake

Ingredients:

½ cup (100g) white sugar
1 sticks (100g) butter, softened at room temperature
2 eggs at room temperature, lightly beaten
1 teaspoons vanilla extract
1 cups (110g/ 4oz) All purpose flour
½ tsp baking powder
¼ tsp baking soda
pinch of salt
red, orange, yellow, green, blue, food coloring

Instructions:

Step #1:  Batter Mixing

Start with a large bowl to mix your batter, add your room temperature butter and sugar and mix well.

Step #2: Add Egg

Add one egg and mix in, once it’s mixed in, continue to the next. Your mix should not be curdled

Step #3: Vanilla Extract

Now add your vanilla extract and give it a whisk.

Step #4: Dry Ingredients

Add all your dry ingredients to your mixed wet ingredients, and then gently whisk these together until the flour is combined.

Step #5: Rainbow Cake

To color our Rainbow Cake, we’re going to divide the mix evenly between 5 bowls and put a dot of food coloring in each one: Red Orange, Yellow Green, and Blue! Now we have our colors ready to go

Step #6: Getting the Mug Cake Ready

Time to assemble the mug cake. In a microwavable mug, add a little spoon of cake batter all on top of each other.  The more small spoonfuls the more color you can get in there. This cake actually triples in size so just be careful what mug you mix it in.

Step #7: Now into the Microwave

Microwave for 45 seconds (every microwave is different so cooking may vary). Take care not to overcook the cake or else it will dry out fast.

Step #7: Decorating the Rainbow Cake

To decorate our rainbow cake, I’m going to top it with the same cream cheese frosting as I did for red velvet.

Step #8: Sprinkle Rainbow Crumbs

Sprinkle Rainbow Crumbs on top for extra color. This is gorgeous!
