Easy Vegan Chocolate Chip Cookie Recipe Perfect for Your Diet
Very Simple Vegan Chocolate Chip Cookie Recipe That You Can Whip Up on Your Cheat Day, Without Actually Cheating!
Craving for a chocolate chip cookie in the middle of your workout? I had to admit that I found the need to start jogging once again, and it was just about a month before summer. I wanted to look great in this one-piece swimsuit that my husband gave me last Christmas. It was between that and donning a skimpy bikini, which I’d rather not and settle with a one-piece instead. (If you know what I mean!) I know my body hasn’t totally transformed yet into that of Britney Spears’ summer-ready-body, even after spending time with my homemade pull-up bar in the kitchen, however, I still try to keep fit for the healthy reasons. 🙂
Now this vegan chocolate chip cookie recipe is my fitness plan helper. It is just as sweet and as cookie-yummy as the classic chocolate chip cookie recipe that we grew up to love. So, why don’t we start baking? I simply just can’t wait!
- 2 cups of Plain Flour
- 1 cup of Vegan Butter (Nuttlex, Earth Balance)
- 1/2 cup of White Sugar
- 1/2 cup of Brown Sugar
- 200 g of Dark Vegan Chocolate
- 1/3 cup of Almond Milk, unsweetened
- 1 tsp of Baking Soda
- 1 tsp of Vanilla Extract
1. Preheat oven and mix
First, pre-heat the oven to 180 ºC or 360 ºF. And then, after creaming the butter, pour in the white and brown sugar.
2. Sift flour and baking soda
Sift flour into the bowl and then mix.
3. Add milk and vanilla
When well combined, add the almond milk and then mix. Add in vanilla and mix again.
4. Chop the chocolates
Chop the dark vegan chocolates, if they are not chopped yet.
5. Add chocolates to batter
Mix with your spatula (or your hand, if you prefer) to combine the chocolates with the sticky batter.
6. Scoop to tray
Line your baking tray with baking paper, or just brush your tray with butter. Then with an ice cream scooper, scoop some batter and place them about 2 & 1/2 inches away from each other on the tray.
7. Bake and shake
Place them in the oven at about 130 ºC for around 20 to 25 minutes, checking regularly. After baking, let it cool for about 25 minutes and you’re ready to shake it!
And so whenever I fix myself this quick vegan chocolate chip cookie recipe, keeping some leftovers in a jar, I know for certain that I’ll never be able to find them again. I usually get to enjoy only one chocolate chip cookie, along with my own brewed tea, and for the rest of what I’ve baked, they simply vanish into thin air! And when asked for the culprits behind the vanishing of the cookies? Well, my daughters would then cheekily respond, “We’re just helping you with your diet, Mommy!” 🙂
