Roasted Tomato Grilled Cheese Sandwich: A Perfect Back to School Snack | Cooking Lessons

When you talk about a perfect back to school snack, I would choose a grilled cheese sandwich. It’s quick and easy to make. You can make it early in the morning and store in the freezer for later. Your older kids can simply microwave these sandwiches when they get home after school. But then you ask, why prepare your kids’ sandwich when they can simply do it on their own? Simple! As a working mom, I’d like them to feel my presence. Let them know how much I want to be there but can’t. Placing a love note on top of their roasted tomato grilled cheese sandwiches gives it a more personal touch. Or something more creative, like a funny poem maybe? 😉 But even without these props, this healthy and cheesy back to school snack will surely paint a smile on their rosy-cheeked faces.

Roasted Tomato Grilled Cheese Sandwich: A Perfect Back to School Snack

It’s the most hectic time of the year, and this back to school snack will absolutely fill my kids’ tummies and hearties. 🙂 After planning the week’s back to school breakfast and dinner, I made roasted tomato grilled cheese sandwich the night before so that they can just microwave it when they’re home. And boy, my girls were pleasantly surprised! My daughters are half-part so much like me and love to solve riddles and puzzles. I knew they would get it when I left a note saying: “There’s something yummy, so go scurry and make it warmy.” (The last word may be off, but heck, this girl’s got to rhyme!) 😉 It’s also a good thing that I remembered to call our neighbor and good friend, Lisa, to help the kids in operating the microwave. I mean, they know how, but I just want to be extra cautious, for safety’s sake.

As my husband and I were pulling up in the driveway laughing– we were reminiscing our funny banters as a couple— we were surprised to be welcomed with lots of hugs and kisses. (I guess it was the sandwich that brought all that cheerfulness!) Excited to try this back to school snack already? Well, here goes!

Ingredients

  • 8 slices of Sourdough Bread
  • 9 oz of Cherry Tomatoes
  • 2 cloves of Garlic
  • 1 tbsp of Olive Oil
  • 1/2 tsp of Salt
  • 1/2 tsp of Black Pepper
  • 1 & 1/2 cup of Cheddar Cheese
  • 1/2 cup of Butter, softened at room temperature
  • 16 pcs of Fresh basil leaves

Steps

1. Slice tomatoes

Cut the tomatoes into halves.

2. Add garlic

Mince garlic and add to the bowl of tomatoes.

3. Sprinkle pepper and salt

Add salt and pepper to your tomatoes, to taste.

4. Drizzle olive oil and toss

Pour in the olive oil. Then toss the tomatoes in the bowl to mix well with the garlic, salt, pepper, and olive oil.



5. Roast tomatoes

Spread tossed tomatoes on a baking pan and bake at 357°F for about 25 to 30 minutes.

6. Prepare cheese

Grate the cheddar cheese.

7. Spread butter

Spread softened butter on one side of each sliced bread.

8. Pile the sandwich filling

Turn one buttered bread over and pile the sandwich filling in the following order: cheese, tomatoes, basil leaves.

9. Cook sandwich on pan

Cook the sandwich on the pan for 3 minutes on each side.

10. Slice and serve

Best served while hot! 🙂
