This pineapple pastry recipe never fails to activate my little girls’ happy hormones. One bite and it will take you to somewhere sunny and sandy. Since it’s summer, there’s a lot of free time to spare and at times, the girls would want to go to the beach. Unfortunately, since we don’t have that kind of break at work as they do in school, I resort to having a pretend game with them by having a beachy afternoon by the poolside and have their sandbox ready to make it more realistic. And what better way to travel to a playful Hawaiian getaway than a sunny and delicious pineapple pastry for snacks? Side it with some summer drinks and you’re all set to a relaxing beach scene in your imagination. 🙂
Enjoy A Delightful Weekend With Scrumptious Pineapple Pastry
This kind of fruit snack is a perfect companion while relaxing with the kids on a weekend. A nice sweet and sour pineapple pastry will make you feel like you’re on the beach, sipping on a cocktail drink or something. 🙂 Pineapple pastry is a super duper easy recipe. You and your kids can team up by letting him or her spread the frosting. Neat huh? Well then, let’s start!
Ingredients
- 1 pc of Square Sponge Cake, whole
- 6-7 tbsps of Pineapple Syrup or Juice
- 1 cup of Pineapple, crushed
- 1/4 cup of pineapple chunks
- 5 pcs of Cherries, fresh
- 3-4 cups of whipping cream frosting
To make the whipping cream frosting, you just need to mix the following with a cooled bowl and beater…
- 2 cups of 35% Whip cream
- 1 tsp of Vanilla Extract
- 7-8 tbsps of Powdered or Icing Sugar
Procedure
1. Cut the sponge cake
First, divide the sponge cake into 3 equal slices using a bread knife. And then, cut each of them horizontally, like cutting open a bread when making a sandwich. Cut the rounded edges to make all the sides look the same.
2. Sprinkle pineapple syrup
Slowly sprinkle the pineapple syrup over both the inside-facing surfaces of the sponge cake slices.
3. Spread frosting
On one of the sponge cakes, spread icing on its rough side.
4. Layer crushed pineapples
Then spread the crushed pineapples over the frosting.
5. Spread frosting and put together
Apply icing on the other sponge cake, still on its rough side, and then put it over the first pineapple-covered cake.
6. Cover entire cake with frosting
With a spatula, cover the whole cake with frosting evenly.
7. Cut and decorate
Cut the covered cake into 4 equal parts and then decorate with sliced pineapples and a cherry on top. Add a little design of frosting with the use of a pastry bag and icing styling tips.
8. Serve and enjoy
Let it chill, serve and indulge!
