Ingredients:
- 1 cup of plain flour
- Pinch of salt
- 2 eggs
- 1/2 tbsp of castor sugar
- butter
- 1 1/4 cup milk
- Homemade Vanilla Ice Cream
- Homemade Chocolate Sauce
Instructions:
Step 1. Crepe mixture
In a mixing bowl crack 2 eggs and add a pinch of salt, then whisk in half the milk.
Add flour and mix until all the lumps are gone. Whisk in the rest of the milk and set aside.
Step 2. Melt the butter
Melt approximately a tbsp. of butter in a large skillet or frying pan over a medium heat and make sure the butter has coated the whole pan.
For Sunday breakfast, I make orange and ricotta pancakes, crepes and eggs. You know men, we usually go for breakfast because it’s the easiest thing to cook and then we try to make it seem fancy. ~ Hugh Jackman
Step 3. Cooking the crepes
Pour a 1/4 of a cup of batter into the coated pan. Note: To make thin crepes, use a ladle to swirl the batter all the way around the pan. Cook for 30 seconds or until sides starts to curl and turn into a golden color. Flip crepe over and cook for another 15 seconds on the other side.
Don’t forget to pour less batter mixture if you are using a small pan. Repeat until all the crepe batter is gone.
Step 4. Top with Ice Cream and Drizzle with Chocolate Sauce
When crepes are cooled, fold them into quarters to make a pocket. Place a spoonful of ice cream in each crepe pocket then drizzle it with chocolate sauce and serve.
Chocolate ice cream was invented long before vanilla, and the first documented recipe for it appeared in the book The Modern Steward, published in Italy in 1692.
These crepes are delicious all by themselves, but we didn’t stop there….stuffed and smothered with vanilla ice cream then drizzled with chocolate sauce.
