This dish is a delicious complete breakfast packed with a hearty dose of  bacon, fresh eggs, colorful mix of bell peppers, and cheddar cheese all in a mouth-watering casserole. Ingredients:

  • 12 slices bacon
  • 1/4 cup butter, melted
  • 3 cups croutons
  • 2 cups grated Cheddar cheese
  • 6 eggs
  • 1 3/4 cups milk
  • 1 bell pepper (any color), diced
  • 1 tablespoon prepared mustard
  • salt and pepper to taste

Instructions:

 Step 1. Cook the bacon

Preheat oven to 325°F (165°C). Place bacon in a large, deep skillet. Over medium-high heat, cook until evenly brown and crispy.

Step 2. Crumble the bacon

Drain the cooked bacon, crumble, and set aside.

Melt butter using either the microwave or stove top then set aside. Spray a 9 x 12-inch baking dish with vegetable oil spray.



Step 4. Place some ingredients into a baking dish

Place croutons in the bottom of the dish, and drizzle it with the melted butter. Mix in the grated cheddar cheese.

Step 5. Whisk eggs

Crack 6 eggs into a bowl and whisk.

Add milk, peppers, mustard, salt, and pepper, and whisk until well-combined.

Step 7. Pour remaining ingredients into the baking dish

Pour the milk mixture over the croutons and cheese, and sprinkle with crumbled bacon.

Place the baking dish in a preheated oven at 350°F for 40 minutes. When baking time is done, take the casserole out of the oven and allow it to rest for 10 minutes before serving this hearty breakfast casserole.
