I was able to visit a friend’s house before during my college years, and that’s where I was able to get a dose of a yummy Mexican grilled corn cob. It was so delicious! But I was not able to get the recipe for it. So I searched the web and saw this perfect easy-to-make Mexican grilled corn recipe. And such perfect timing! My husband and I were really planning to throw a backyard weekend picnic, and this spicy Mexican grilled corn is going to make it extra special. With summer almost coming to an end, we just want to get as much sun while we still can.

They say that you can buy Mexican grilled corn off from the streets of Mexico. Right here, we’ll make it even better by having our own fair share of Mexican experience by grilling in our own backyard. Care to start? Andale! 😉

Ingredients

  • 3 Ears of Corn, peeled
  • 1/2 cup of Mayonnaise or Butter
  • 1/2 cup of Parmesan Cheese, grated
  • 1/2 cup of Feta Cheese, crumbled finely
  • 1 tbsp of Chili Powder
  • 3 slices of Lime, wedged

Steps

1. Grill corn

Put the cobs on the grill. Make sure to cook all sides within 2 to 3 minutes.

Apply mayonnaise all over the grilled corn. Make sure to fill in the creases.

In a bowl, mix the parmesan and feta cheeses. Make the cheese stick to the corn by carefully rolling it over the cheese mixture.
