Ahhh the incredible edible egg….the endless possibilities we could create with it. Well, how about taking it to the flavors of Italy? Yes! A zesty Italian baked egg is a wonderful surprise for the whole family. The robust flavors of Marinara sauce and the freshness of basil and eggs will sure take your taste buds to a whole new level.

A Fancy New Idea To Jazz up an egg that will sure make the whole family say….Mangia!

If you’ve already tried Huevos Rancheros and loved it, then, you’ll definitely love this Italian version of it. This dish is a great gourmet breakfast on weekend mornings or simply a special meal for everyone to enjoy. So start your day with this Zesty Italian baked egg for breakfast and make you morning smile. 🙂

Thanks to the recipe of Gemma Stafford so that our family could have a taste of Italy for breakfast. Follow the recipe below and enjoy.

 

Ingredients:

  • 4 tablespoon extra-virgin olive oil
  • 1 medium onion coarsely chopped
  • 3 cloves garlic thinly sliced
  • 1 teaspoon hot chili flakes
  • 1 tin (14oz/400 ml) tomatoes, crushed
  • 8 large eggs
  • 1/4 grated cheddar or Parmigiano Reggiano
  • Shredded basil
  • Salt and pepper

Instructions:

Step 1. Saute the ingredients

Place a skillet, preferably cast iron, on the grill over medium heat. Add the oil, wait until nice and  hot and then saute chopped onion, garlic, and chile flakes and cook until softened and light brown, about 8 minutes.

Step 2. Cook the crushed tomato

Add the crushed tomato and bring to a simmer for  about 10 minutes. Season with salt and pepper, and you can also add a little bit of sugar.

 



Step 3. Separate the sauce

Turn off the heat and divide the sauce into two separate dishes (you have the option to make one big dish or you can also use the skillet you cooked the sauce in to make an individual portion).

Step 4. Crack the eggs and sprinkle with cheese

Crack the eggs one by one into your dishes. Sprinkle with your grated cheese.

 

Step 5. Bake

Cook at 400°F (200°C) for about 12-15 minutes or until it is set to your liking. For best result, the eggs should be baked over-medium consistency. 

Egg yolks contain almost all the vitamins and minerals in the egg.

Step 6. Remove from the oven

Remove the pan from the oven and let them sit for 3 minutes.

 

Step 7. Garnish

Sprinkle some fresh basil and serve with buttered toasted bread on the side.
