Ingredients:
- 3 oz (85 gr) 100% pure unsweetened chocolate
- 2 tbsp hazelnuts
- 1 tbsp unsweetened cocoa powder
- 5 whole pitted dates
- 2 tbsp unsweetened coconut flakes
- 2-3 tbsp maple syrup
- ½ cup water
Instructions:
Step 1. Melt the Chocolate
Melt chocolate in a double boiler. If you do not have one, pour water in a small pot and bring it to a boil. Place a plate over the boiling water and put the chocolate over it. Gradually stir the chocolate on top with a spoon until it has completely melted. When all of the chocolate has melted, remove the plate from the pot.
Tip: Use a pot holder or something to protect your hand when removing the plate because it’s extremely hot!
Step 2. Puree 4 Dry Ingredients
Using a blender, purée the hazelnuts, the cocoa powder, the dates and the coconut flakes all together. Once it’s all well combined, go to Step 3.
Step 3. Combine the Puree, Melted Chocolate, and Maple Syrup
Simply add the melted chocolate and the maple syrup into the mixture. Pulse the ingredients until they are blended well together. Each one of the ingredients needs to be distributed properly in order to achieve the exact chocolatey taste we’re looking for.
Step 4. Blend in the Water
Add ½ cup of water and blend again until you reach a soupy texture. Try to see if your mixture has changed its texture and if it looks like the image above. If it is, then your pudding is almost ready!
Step 5. Cool Inside the Fridge
You need to note that pudding thickens as it cools down. To get your treat ready, place the pudding in a container and let it cool in the fridge for about 30 minutes or so.
Step 6. ServeServe with your choice of fruits or berries and you’re done. You can now enjoy and satisfy your sweet tooth cravings, without the extra pounds!
