Aside from pizza, one of Italy’s most famous dish is pasta. And when you’re NYC, there’s this one restaurant where you can find one of the best versions of vodka sauce – in Carbone. It is a pricey Italian restaurant in the Greenwich Village from Mario Carbone, Rich Torrisi and Jeff Zalaznick.

With all due respect to Italian mommies put there, the Spicy Rigatoni Vodka might just be the best version of vodka sauce out there. This luxurious pasta dish features onion soubise: a play on béchamel using onion puree that brings an added rich texture to the classic cream, pecorino, tomatoes, and Calabrian chilies.

The rigid housemade maccheroni is cooked perfectly al dente. There’s no room for disappointment with the meatballs and rigatoni — indeed these two make a perfect pair!

Bloomberg restaurant critic, Ryan Sutton, names Carbone as the best new addition to his list of the best new spots.
