Appetizing Creamy Spinach Spaghetti Recipe To Bring Out The Veggie Lover In You

Ingredients:

- 2-3 handfuls of spinach
- 1 onion
- 3-4 cloves garlic
- 2 avocados
- 1 cup plain yogurt
- 1 1/2 cup cherry tomatoes
- 1 packet spaghetti (approx. 1/2 lb.)
- pepper & garlic salt (pinch/ to taste)
- 2 tbsp olive oil
- basil, cheese (optional topping)
Instructions:
Step 1: Cook the Pasta
You can buy any spaghetti of your choice and simply follow the instructions on the packet. Add salt if you want the pasta to taste brinier than usual.
Step 2: Bake the Cherry Tomatoes
Place the tomatoes on a tray and sprinkle a little bit of extra virgin olive oil, some garlic salt and pepper for some extra flavor.
Once you’ve seasoned them to your desired taste, bake them in the oven for about 30 minutes at 175°C.
Step 3: Make the Sauce
While waiting for the tomatoes and the pasta to cook, you can start making the sauce for the spaghetti.
Chop the onion and about 4 cloves of garlic then stir-fry until it softens.
Add the spinach and stir-fry it along with the onion and garlic. Sprinkle some garlic salt and pepper to add a little flavor to the sauce.
Allow the spinach to wilt and once done, turn off the heat.
Step 4: Blend
Slice up two avocados and scoop out the flesh from the peel with a spoon.
Place the avocado flesh inside the blender along with the spinach and some yogurt.
Blend the sauce and once you’ve achieved an even texture, it is now ready to be mixed with the pasta.
Step 5: Serve
Once the pasta is done, drain them in a colander and rinse with cold water to avoid overcooking the pasta. Take the tomatoes from the oven and set it aside.
Mix the sauce, pasta, and tomatoes, sprinkle some basil and cheese and you’re done with your Creamy Spinach Spaghetti!
