First Dessert: Brigacake Recipe
Ingredients:
- 4 tbsp cocoa powder
- 1 tsp vanilla extract
- 220 ml sunflower oil
- 3 eggs
- 220 g caster sugar
- 50 g chocolate sugar strands
- 398 g condensed milk
- 150 g self-raising flour
- 1 tbsp butter
- 3 carrots
Instructions:
For the Cake
Step 1. Peel and grate the carrots
Peel and grate the carrots, then blitz them up to a purée with oil and eggs.
Step 2. Whisk into dry ingredients
Whisk the carrot mixture into the sugar and flour.
Step 3. Pour into lined tin and bake
Pour the cake mixture into a lined baking tin and bake in an oven at 180 degrees C for 30-40 minutes until it’s risen, bounces back when touched and a knife comes out clean when inserted.
For the Brigadeiro
Step 4. Mix
Beat the cocoa, butter and condensed milk in a bowl until smooth.
Step 5. Cook the Brigadeiro
Cook in the microwave for 4-6 mins (800 watts), stirring halfway through until the mixture is very hot and when poked with a toothpick or a knife, it should leave a mark.
Step 6. Wrap the cake
Once the Brigadeiro mixture and the cake has cooled, cut the cake into small squares. With oiled hands, press some of the chocolate mixtures as thin as possible then wrap it around the square of cake.
Step 7. Roll
Roll the ball between your hands so that it’s smooth all over and roll in chocolate sugar strands. Then repeat for as many balls you’d like.
Tada! You’re done. Store these babies in the fridge and I’m sure no one can resist this sweet little treat.
Second Dessert: Arroz Dolce or Sweet Rice Pudding Recipe
Ingredients:
- 120 ml coconut milk
- 1 tin of condensed milk
- 480 ml water
- 185 g pudding rice
- 8 peanut cookies
Instructions:
Step 1. Cook the rice pudding
Splash the coconut milk and water into a large bowl and stir in the rice pudding. Cook in the microwave (800 watts) and stir every 5 minutes for 15 minutes and by then the rice should be plump and cooked.
Step 2. Sweeten
Sweeten the mixture with the condensed milk and stir, then cook for another 4 to 5 minutes. Serve it with peanut cookies on top. And you’re done! Yummy… This is so exciting and so simple but the result is extraordinary.
Third Dessert: Baked Coconut Cake Recipe
Ingredients:
- 3 eggs
- 3 tbsp butter, softened
- 200 g desiccated coconut
- 398 g condensed milk (1 tin)
- 240 ml milk
Instructions:
Step 1. Mix the first three ingredients
Crack the eggs into a mixing bowl and whisk together with the milk and softened butter. Then whisk in the desiccated coconut.
Step 2. Sweeten
Whisk in an entire tin of condensed milk.
Step 3. Pour into a baking dish
Pour the contents into an ovenproof baking dish.
Step 4. Bake
Bake the cake at 180 degrees C for 40 minutes, until golden on top and set right through. Test with a clean skewer or fork. It should come out clean. Viola! For sure you’ll never forget the taste.
