Exhausted from a long days work and the kids just got home from school… what better way to enjoy a hearty crockpot chicken dinner brought to you by The Cook-n-Share channel as your main course. Thank goodness for the innovation of a crockpot and this flavorful chicken recipe that will cook itself while you’re at work. You don’t have to wait for a special occasion to serve your family a festive meal.  This mouth-watering recipe will make your dinner table looks like a celebration even on an ordinary day of the week. Ingredients:

  • 1 kg chicken
  • 3 stalks of celery, cut in half
  • 1/4 bag of baby carrots

For the Rub:

  • 1/2 tsp paprika
  • olive oil
  • 2 tsp of salt and 1/2 tsp of black pepper

For the Stuffing:

  • 1 fresh lemon sliced in half
  • 1 small onion sliced in half
  • 2 whole cloves of garlic
  • 1 rosemary sprig

Instructions:

Step 1. Drizzle the olive oil

Wash and pat the chicken dry. Place it into a container, drizzle with olive oil and rub it all over the chicken making sure the whole bird is coated.

Step 2. Season with paprika, pepper, and salt

Sprinkle the paprika, salt, and pepper over the top. Rub all the spices until it is completely covered.

 

Step 3: Stuff the chicken

Stuff the chicken cavity with the lemon, onion, garlic, and the rosemary spring. Tie the chicken legs together enclosing the cavity using a string.

Step 4. Cook

Place the celery and carrots in the bottom of the crockpot. Put the chicken over the top. Place the lid on, set it on high, and allow it to cook for 6 hours.

Step 5. Serve
