Easy and Enticing Recipe that is Uber Delicious!
It seems like I’m constantly struggling against my tendency to quickly throw a dip together every time I need an appetizer. Whether I’m hosting a party, looking for an easy snack recipe, or have been invited to a potluck, it seems like the only idea I have for a starter recipe is some sort of fattening, boring, unimpressive dip. So we set out to find an appetizer recipe that is not only healthy and low calorie, but beautiful, impressive looking, but still not so difficult that you need 100 tools and a culinary degree to complete it. Easy, healthy, and delicious vegetable appetizer. What more could you want?
Ingredients:
- 3 Zucchinis
- 3 Pointed Peppers
- 2 Red Chili, minced (remove seeds)
- 1 Pack Philadelphia Cream Cheese
- 3 Packs Smoked Salmon
- Salt and freshly ground Black Pepper, to taste
- Chives, for garnish
Here is how!
Step 1
Grill the pointed peppers until blackened. Then take the grilled peppers off the grill and let them cool down in a plastic bag. Remove the skin and seeds of the grilled pepper and chop finely.
Step 2
In a small mixing cup or bowl, combine the chopped pepper with a few tablespoons of cream cheese, salt, and minced pepper to taste (set aside).
Step 3
Cut the smoked salmon into thin strips and spread on the cream cheese mixture and roll up the salmon strips ( set aside).
Step 4
Make a very thin slice of a half of a zucchini. Make grill marks on the zucchini (Don’t cook the zucchini – you want them raw. Just leave them a few seconds to make the grill marks). Roll the salmon into the zucchini strips and insert some chives for decoration. Done! You can now make as many as you want.
