A Complete Meal of Easy Brunch Recipes For Weekend Suprise Home Visits
My mom and dad are so fond of giving us surprise visits during weekends. One minute they’re calling me to say that they are coming over, the next thing they’re already right at our doorsteps! I have prepared cookies for them, appetizers, healthy pastry bars and just recently, brunch dishes.
So, for a change, and to keep their sugar levels normal, I now keep as much easy brunch recipes as I can to equip myself during these unguarded moments. 🙂 No need to rattle your brain as to which dish would go perfectly with which because this is already a complete healthy meal. Ready to prepare brunch?
Brunch Recipe #1
Ham & Swiss Puff Pastry Bundles
Ingredients
- 1 sheet of Puff Pastry Dough
- 1 tbsp of Olive Oil
- 1 bunch of Asparagus, trimmed
- 4 slices of Ham
- 4 slices of Swiss cheese
- 1 pcs of Egg
- 1 tbsp of water
Procedure
1. Cut pastry dough
First, you sprinkle a little flour on the table and then lay down your pastry dough. Cut it into 3.5-inch squares and then set aside.
2. Oil asparagus
Lightly coat your asparagus with olive oil to prevent the asparagus from burning when you bake them.
3. Arrange fillings
Arrange the bundle like so: Pastry dough at the bottom, followed by the ham, the cheese and the asparagus on top.
4. Fold into bundle
Fold all of the layers into a bundle by slightly pressing the tip of the dough on the top together.
5. Prepare egg wash and brush
To prepare the egg wash, simply whisk 1 tbsp. of water and egg together.
Then just cover the bundles with the egg wash with a pastry brush.
6. Bake and serve
Put it into the oven at 425ºF for about 15 to 20 minutes. Serve and enjoy!
Brunch Recipe #2
Sour Cream & Chive Scrambled Eggs
Ingredients
- 1 tbsp of Butter OR Oil for cooking
- 3 pcs of Eggs
- 2 tbsp of Sour Cream
- 2 tsp of Chives, freshly chopped
- Salt and Pepper
Procedure
1. Combine eggs and sour cream
Combine sour cream and eggs together in a mixing bowl until smooth.
2. Cook, season and serve
Melt butter in the pan and cook with constant stirring. When your eggs are fully cooked, sprinkle your salt, pepper, and chives, then combine. Done and ready for plating!
Brunch Recipe #3
Homemade Whipped Cream
Ingredients
- 1 cup of Whipping cream
- 2-3 tbsps of Icing sugar
- ½ tsp of Vanilla Extract
Procedure
1. Mix all ingredients
Combine all your ingredients really well with an electric mixer or whisking it by hand will also do.
2. Serve when ready
You will know that it’s ready when it sticks to the whisk this way. Top it on your berry bowl and serve.
Tips:
- The egg wash is very important because it will make your dough achieve that golden flaky crust.
- The trick to having creamy scrambled eggs is by constantly moving them until they are fully cooked.
- Salt makes your eggs dry up so add them at the last part of cooking.
