What’s not to love with a fish taco? Its fresh ingredients are full of mouthwatering bold flavors, simple to prepare yet absolutely divine. This classic south of the border dish and its exotic combination of flavors brings us a sense of savory adventure in every bite.

Ingredients:
For the Batter:
- 150 g flour
- 1 tsp baking powder
- 1 egg
For the Sauce:
- 200 ml milk
- 3 tbsp yogurt
- 3 tbsp sour cream
- zest and juice of 1 lemon
- 1 tbsp horseradish cream
- 4 mint leaves, finely chopped
For the Salsa:
- 2 tomatoes, without seeds and diced
- 2 garlic cloves, finely chopped
- 1 spring onion, finely chopped
- 1 handful of coriander, finely chopped
- olive oil, extra virgin
For the fish taco:
- 8 small tortillas
- 800 g haddock filet, cut into 5 cm pieces
- 8 lettuce leaves
- 1 red onion, rings
- 1 avocado, deseeded and diced
- 2 chilies, rings
- zest and juice of 1 lime
- 4 sprigs of coriander, leaves roughly chopped
- oil, for frying
- salt and pepper
Instructions:
Step 1. To make the batter
Mix the flour, baking powder, and the milk in a big bowl. Then add the egg and a pinch of salt. Continue whisking until you have a smooth batter and put it in the fridge.
Step 2. To make the Sauce
Mix the yogurt, sour cream, lemon zest, lemon juice, horseradish cream and mint.
Season with salt and pepper and set aside.
Step 3. To make the Salsa
Make the salsa by mixing the tomato cubes with the garlic, spring onion, coriander.
And then you add the olive oil, salt, and pepper to taste. Set aside.
Step 4. Fillet the fish (haddock)
Fillet the fish into sizes that will fit into the Taco.
Step 5. Deep fry the fish
Season both sides with salt and pepper. Cover them with batter.
And then deep fry the fish (haddock) until golden brown and crispy for around 3-4 minutes.
Step 6. Warm up the tortillas
Meanwhile, warm up the tortillas on both sides in a frying pan and prepare them for taco arrangement.
Step 7. Dry the fish
Pat the fried fish dry with kitchen paper.
Step 8. To build the Fish Tacos
Build your tacos by placing in the lettuce.
And then you put the fried fish on top and then cover it with fresh salsa.
Add the onion rings, avocados, chiles, and then top it off with a little of the sauce. Fold them in half and add lime zest and serve with the sauce, coriander, and lime.
